Jalapeño-Garlic Stuffed Dove Breasts

Ingredients:
24 dove breasts, removed from bone, cleaned and patted dry
12 slices bacon, halved
4 oz smoked cream cheese, softened
2 tbsp BK’S Bar-Ba-Chew Rubs Jalapeño-Garlic Rub
1 tbsp olive oil
Toothpicks or skewers
Optional Garnish
Fresh chopped parsley

Instructions
1.) Prepare the Dove Breasts
Remove breasts from the bones, rinse and pat the dove breasts dry with paper towels. Lightly coat each breast with olive oil to help the seasoning adhere.
2.) Season
Sprinkle BK’S Bar-Ba-Chew Rubs Jalapeño-Garlic Rub evenly over both sides of each breast. Let them rest for 10–15 minutes to absorb the flavors.
3.) Stuff with Smoked Cream Cheese
Using a small knife, create a slit in the side of each breast to form a pocket. Fill each pocket with about 1 teaspoon of smoked cream cheese.
4.) Wrap with Bacon
Wrap each stuffed breast with a half slice of bacon, securing it with a toothpick or skewer to hold everything in place.
5.) Grill or Smoke
Grill Method: Preheat grill to medium-high heat (around 375°F). Grill the dove breasts for 3–4 minutes per side, turning occasionally until the bacon is crisp and the internal temperature reaches 160°F.
Smoker Method: Preheat smoker to 250°F. Smoke the dove breasts for 45–60 minutes, or until the bacon is rendered and the internal temperature reaches 160°F.
6.) Rest and Serve
Remove from heat and let rest for 5 minutes. Sprinkle lightly with additional BK’S Bar-Ba-Chew Rubs Jalapeño-Garlic Rub and garnish with chopped parsley if desired.
