Crockpot Buffalo Ranch Chicken Chili

Ingredients:

1.5 pounds boneless, skinless chicken breasts or thighs, diced

1 tablespoon BK'S Bar-Ba-Chew Rubs Championship Chili Seasoning

1 tablespoon olive oil (optional, for browning)

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, diced

1 stalk celery, diced

1 can whole kernel corn

1 can kidney beans, drained 

1 can pinto beans, drained

1 can Rotel diced tomatoes

2 cups chicken broth

1/4 cup buffalo sauce (or adjust to taste)

1 packet ranch seasoning 

1/2 block cream cheese

Optional toppings: shredded cheese, chopped green onions, sour cream, additional buffalo sauce

Instructions:

1.) Prepare the Chicken: Dice chicken and season BK'S Championship Chili Seasoning. For extra flavor, you can brown the chicken in a skillet with a little olive oil for 2-3 minutes per side, but it's optional.

2.) Add to Crockpot: Transfer the seasoned chicken to the crockpot. Add chopped onion, bell pepper, garlic, beans, diced tomatoes, chicken broth, buffalo sauce, corn, jalapeno, celery, and ranch seasoning.

3.) Add cream cheese when there is 1 hour of cook time left.

3.) Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken will be tender and flavors well combined.

Optional Garnishes: Top with shredded cheese, chopped green onions, sour cream, or extra buffalo sauce.
