Smoked 3-1-1 Hot Honey BBQ Ribs

Ingredients:
1 rack of pork Baby-Back or St. Louis-Style Spare Ribs
BK’s Bar-Ba-Chew Hot Honey BBQ Rub
Brown Sugar
Honey
1/4 stick butter
1 cup of your favorite BBQ sauce
Directions:
Remove membrane from back of ribs with a knife and paper towel.
Season ribs with BK’s Bar-Ba-Chew’s Hot Honey BBQ Rub on all sides and all to set for at least 1-2 hours. This will allow the salt in the rub to draw some moisture out of the ribs, which helps in developing a better finished bark.!
Fire up your smoker or your grill to 250 degrees. Once it comes up to temp, and rub has set into the ribs for a couple hours, place ribs on grate bone-side down, and allow to cook untouched for 3 hours. The ribs should hit an internal temperature of about 160-175 degrees at this point.
Lay out 2 sheets of foil for each rack that are each about 6” longer than your rack of ribs. Lay the rack bone-side down on one sheet of foil. Drizzle a little honey over the ribs, and sprinkle some brown sugar and a little bit more Hot Honey BBQ Rub on top of the ribs, Top off with a few pats of butter. Place the other sheet of foil on top of ribs, wrap both sheets together tightly, and place back on smoker for 1 hour.
While ribs are continuing to cook, make a glaze on stove-top with 1 cup of your favorite BBQ sauce, 1/4 cup of honey, and a couple tablespoons of Hot Honey BBQ Rub. Allow to simmer.
After 1 hour of smoking the wrapped ribs, remove from foil, place ribs back on the smoker, and brush the glaze on top of ribs, and allow to smoke for 1 more hour.
Pull ribs off smoker, allow to rest for 15 minutes, and devour!!
