1 tsp salt (adjust to taste)
½ tsp black pepper
½ cup sour cream
3 green onions, sliced (for garnish)

Place diced potatoes, chopped onion, and minced garlic into the crockpot. Sprinkle BK’S Bar-Ba-Chew Rubs Brisket/Beef Rub evenly over the top. Pour in chicken broth and stir to combine.Slow Cook
Cover and cook on low for 7–8 hours or high for 4–5 hours, until the potatoes are tender and easily mashed with a fork.Create the Cream Base
In a small saucepan, melt butter over medium heat. Whisk in flour to form a roux and cook for 1–2 minutes. Slowly whisk in milk until smooth and slightly thickened. Stir in heavy cream, then pour the mixture into the crockpot.Blend and Thicken
Use a potato masher or immersion blender to mash some of the potatoes directly in the crockpot, leaving some chunks for texture. Stir in shredded cheddar cheese until melted and smooth.Add Final Touches
Stir in sour cream and half of the crumbled bacon. Taste and adjust seasoning with additional BK’S Bar-Ba-Chew Rubs Brisket/Beef Rub, salt, or pepper as desired.Serve and Garnish
Ladle soup into bowls and top with remaining bacon, extra cheese, and sliced green onions.
